Not only there are historical reasons to understand the importance of oil in the region of La Subbetica Cordobesa, there are other reasons and, among them, the quality of the product stands out. It has been the crop that has adapted better to these lands, most of them integrated into the Natural Park of the Subbetica Cordobesa, and endowed with singular topographic and edaphic peculiarities.
The extra virgin olive oil is defined by current regulations as a 100% natural natural fruit juice, higher category obtained directly from olives and only by mechanical procedures, as well as cold extraction. And as such we must keep it.
In this sense, our #LivesOlives facilities that are under the influence of the Subbetica Cordobesa, have an independent and heated winery. The air conditioning in the cellar is essential since it allows us to maintain a constant temperature of 15ºC throughout the year, ideal for the correct evolution and conservation of our extra virgins in organic production.
